No that title isn't a pun for all those vertically challenged people. It more accurately discribes my dinner last night. For those of you who know me, we all know I'm no Rachel Ray. My culinary abilities consist of dine out or order in. But last night I hit an all time low and feel the need to publicly apologize to my unfortunate children. I wasn't feeling all that great yesterday (which IS my excuse and I'm sticking to it) so when dinner time rolled around and the kids where wanting something to eat...Jacks got a cup of pears and a bowl of cheerios, and Bennett got a cup of mandrine oranges and a plate of tortilla chips. I know, I'm awful!!! So now here is my plea to all of you wonderful cooks. I need ideas for quick and simple meals for the kids. Especially since I'm moving to the middle of nowhere in Arizona and won't have too many options on the whole take out thing. (I'm actually going to have to attempt to make meals)The boys are both tired of my mac & cheese, peanut butter sandwhiches, and chicken nuggets. I need your ideas on how to feed them. Please help me!!!
(On a side note, we leave July 21st and will arrive in Arizona, I am told, right at the start of their monsoon season! Great! Just what I needed!)

Well, if we weren't moving...I'm sorry I never got around to showing you any good things to make! I will give you some recipes though. And there are some really good frozen bag things that I have used out of desperation. When do you want to do dinner? Wednesday?
Ya know, sometimes as a mom, we go into survival mode and do what we have to do. If you go to my blog there are a couple of recipe blog links, try them out, lots of good, easy, cheap recipes. Kraftfoods.com has some good recipes and recipezaar.com has some good ones, just search for an ingredient and sift by rating, I've found lots of good ones there.
Here are some of what our kids eat:
Chicken with dip (it's my version of Sizzler's malibu chicken)
Buy those Tyson chicken breast patties
cook them about half way. Throw a slice of ham and swiss cheese on top. Sauce: 2 T. of Ranch dressing. 1 tsp of mustard and about 1/2-1 tsp of brown sugar mix together. Dip chicken and enjoy!
Tonight I did my Lemon Chicken:
3-4 chicken breasts cut into long slices.
In 1 bowl mix together:
1 cup bread crumbs (I do the itialian style)
2-3 Tbs. lemon pepper (throw in with bread crumbs.
Salt to taste.
In another bowl beat 1 egg with 1 cup milk.
Dip chicken into milk then crumb mixure back into milk and back into crumb mixture.
preheat oven to 400.
Throw chicken into an oven safe bowl (I use my corning ware or an 8X8 inch pan.) Throw chunks of butter on top and slice 1 lemon and arrange around chicken.
Bake for 2 hours. Salt and pepper to taste!
